R.A.N Tip of The Week! Alternative Soul Food

As a Southern Girl from North Carolina who grew up on my family's delicious soul food, I was disappointed to later learned that it is not very healthy for us and is the cause of high rate in heart disease, diabetes and high blood pressure in the African-American community.

Since becoming the Founder of Roc-A-Natural and Creator of Body By R.A.N in 2013, I am dedicated to building self-esteem through the beauty of natural hair and promoting proper nutrition and exercise to illuminate your beauty from the inside out.

Today's Sunday meal was created with a healthier mindset and the Roc-A-Natural way:

- Smothered Veggie Burgers

*Sautee (4) Morning Star Farms Veggie Burgers, Chipotle Black Bean in about 1/2 cup of Olive Oil until brown on both sides. Transfer to a paper towel lined plate to remove excess oil. In the same pan with remaining oil, sautee, 1 onion and 1 garlic crushed. Add 3/4 can of Cream of Mushroom Soup and 1 cup of Almond Milk. Season gravy with your favorite seasonings and blend. Turn stove off and add Veggie Burgers.

- Roasted Butternut Squash

*Rinse 2lbs of Organic Butternut Squash(cubed). Pat dry and lay in a pan and sprinkle with Olive Oil. Add Sea Salt, Pepper and Cinnamon. Toss well and bake on 350 degrees for about 45 mins or until soft and lightly browned. Drizzle with Organic Agave in the Raw. Turn off oven and let sit for about 15 mins.

- Baked Cauliflower Rice

*(1) 12oz Steam In Bag Rice Cauliflower. Cook as directed. In a saucepan, add (1) cup of Almond Milk, 1/4 stick of butter, 1/4 can of Cream of Mushroom soup and 1/2 tsp of mustard. Add about 1/2 cup of Sharp Chedder Cheese and favorite seasonings. Stirring until melted and smooth. Fold in Cooked Rice Cauliflower. Add 1/2 cup of shredded Sharp Cheese on bottom of baking pan. Pour in a layer of Rice Cauliflower and cheese mixture. Repeat and end with another 1/2 cup of shredded Sharp Cheese. In a separate bowl, wisk together 3/4 cup of Almond Milk and (1) egg. Pour over mixture. Bake uncovered on 350 degrees for 1 hour or until lightly brown. On the last 10 minutes of baking, add Crispy Onions on top.
